Hi,
I have my ex-in-laws coming round for dinner tonight and need a little help with dessert. I have some amarettini (mini amerreti) biscuits left over from Christmas which I want to use up and I've got some cooked rhubarb out of the freezer and am thinking of some kind of layered chilled dessert. Would you mix the rhubarb with something (i.e. cream) and spoon over the (possibly crushed) biscuits or layer something (again like cream) on top of the rhubarb on top of the biscuits?
