I bought some puff pastry this week, with a view to extending the children's evening repertoire.
Does anyone have any ideas of I can try?

We like those tomato spirals from 'I can cook' on cbeebies - bet the recipe is on the website somewhere. All you need us Tom purée, grated cheddar and some basil. Roll out pastry to pound coin width, spread on purée, sprinkle on cheese and chopped basil. Then roll into long sausage, cut inch width slices and lie the resulting spirals on their side on a baking tray. Can't recall how long to bake for or at what temp, sorry! But easy peasy and v tasty. Smile

That's interesting topsmart, I have to say I wouldn't normally think of going to cbeebies for recipe ideas, but that one would definitely work.

Use it to make pizzas.

Roll into a large rectangle. Score a smaller rectangle to leave a 1cm crust.

Passata, cheese then whatever you fancy. 15 mins in the oven. Job done

I like the sound of the cbeebies one too! I have some here, including a sausage roll one.

Apparently if you squirt a bit of ketchup into the sausage roll alongside the meat they are especially tasty, I've yet to try this!

I just use the ready-rolled (lazy arse) and pop on a layer of proscutto, torn bits of mozarella and baby tomatoes and leave about 1cm around the edge empty. It comes out rather nice. I pop sundried pesto dollops with mozarella, toms and asparagus on mine.

Or sweet - very thin slices of apple, glazed with apricot jam/water solution before baking. Lovely!

Med veg tarts.

Chop up onions, peppers, courgettes, tomatoes, aubergine, mushrooms, squash, garlic etc & oven roast with olive oil & balsamic vinegar (can be done in advance, freezes well - in fact you can buy bags of frozen roast med veg if you don't want to make your own.)

Cut squares of ready roll puff & poke into muffin tins. Add spoonful of veg, teaspoon of pesto & half a mozzarella pearl or a cube of feta.

In oven until golden & bubbling. Yum!
