Your most delicious rice pud recipe?

I normally just bung in the pudding rice, milk, nutmeg and caster sugar.

Got anything nicer?

Try replacing some of the milk for cream for a more fatty pud :)

Use a darker sugar to give it a caramel/toffee flavour.

My DD's like it with lemon curd stired through.

My fave at the moment is using a tin on coconut milk (just the set part, pour off the water) and just stiring that through while it's hot to melt it. Omm nom nom :)

I make it like you do but serve it with a really good quality vanilla ice cream!!!! Grin

Slow cooker - 2 pints milk, 1 tin evaporated milk, 150g pudding rice, 150g sugar, grated nutmeg. Stir all together, leave to brew stirring once or twice. Mmmmm, I now have a yearning for rice pudding for breakfast :)

As the OP but with a blob of butter and nutmeg grated on the top, not stirred in.

That way you get a nutmeggy skin on the pud.

Rice pudding ice cream is fan-bloody-tastic too.

I use the same ingredients as you, but I add roseewater or vanilla essence and after its set, I add some crushed nuts:

I make a version with star anise It is naturally sweet so needs no sugar. It's a hit in our house!

Yes, my (Portuguese) mother always did hers like that and it is delicious - not to mention the whole house smells divine for hours!
