Fish Pie...

Leading on from the thread about freezing it - just wondering if anyone has any recipes?

I'm normally a battered cod girl but feel a bit mean DH doens't get any - he eats all fish/sea fish. so could I perhaps do two v small ones? what fish do u use?

anyhow was just wondering what u guys use. cos we don't eat anywhere near enough fish - big meat eaters we have become.

I often ring the changes with different types of fish or sometimes mix them together, e.g. cod with salmon, haddock with prawns, etc. Poach the fish in milk, then make a sauce with the milk (adding cheese if you fancy). Then mix in the fish and add masses of lovely mashed spuds over the top and bake. You can add herbs (either to the fish or to the potatoes), can put a layer of cheese on top of the potato, etc.

Delia's smoked fish pie is really good. Really simple - you poach a mixture of smoked haddock (not the dyed yellow stuff, proper finnan haddie) and ordinary white fish (whiting, cod, that sort of thing) in milk with a bit of butter and bayleaf; then you make white sauce with the milk you poached the fish in, plus some more; then you pile mashed potato on top and grate some cheddar over; and bake.

You can mix in prawns, parsley, spinach, lemon juice, whatever you like to add. Even chopped up hard-boiled eggs, but that's going too far for me.

Mines made up really no particular receipe but fillets (raw) of salmon and cod (or any other white fish) cut into cubes in the bottom of a dish top with some defrosted frozen prawns pour over a white sauce (mixed with parsley if you wish) top with mashed potatoe and bung in the oven on 190 for about half an hour then grill the top till brown. (put cheese on top if you like) Yummy with spinach or frozen peas.

can u mix the fish with the spuds? (I perfer v bland type fish) althou could be tempted to try other I guess if the pots hid the taste!

i normally used smoked haddock / smoked cod or unsmoked haddock or cod , or a mix! whatever really... its YUMMY!

If you don't like the fishy taste avoid the bright orange smoked fish and go for undyed unsmoked haddock or salmon.

I usually add peas too.. just to get some green in. They can go in frozen, they cook in juices in the oven.

Here's a nice casserole thing...

Cheap white fish.. nuke in a bowl until cooked

Cheese sauce, homemade or whatever, with a good pinch of Fines Herbes.

Tiny cubed potatoes.

Put it all in a cassarole dish, after deboning the fish, and cook in the microwave with a lid on until the potato is soft.

thanks girls - my DH's face nearly lit up when I sai I was going to give it a try for him - althou that also might have been a look of terror! lol.

I know jamie Oliver does a nice one but I find it a bit of a faff so I make mine up with whatever I have usually cod prawns and salmon, at my fish shop you can buy cubes of salmon and cod already mixed and to give it an extra twist I add coconut milk instead of ordinary milk, bung the mash on top with knobs of butter and tomatoes.
