You can cut up into chunks, sprinkle with salt and leave in a colander for a while to drain off the bitterness. Rinse, pat dry with kicthen towel then roast as described with chopped peppers, corugettes, cherry tomatoes, onion etc. sprinkle with dried basil and oregano.

Otherwise perhaps you could cut in half, deseed and scoop out some flesh and roast in oven until starts to soften. Fill with chopped tomatoes, peppers etc drizzle with olive oil and continue to roast until cooked through. Sprinkle with grated cheese and grill to melt it ?

ooh may be too late - proabbly about 30-40 mins total or less if you are dicing it up.

slice into thin, long wise flat strips then brush with oil and grill for a few minutes. Butter with ground up cashews or almonds mixed with a tiny bit of herbal salt and a drop of olive oil. Roll up and tie with a chive (to b fancy) or serve as is on or with some heated tomato puree which has some mixed herbs and salt added to it - pretty impressive to look at, tastey and easy!
