Veg lasagne

I had a lovely lasagne, layed with peppers courgettesetc anyone anyideas fro a recipe?

Vegetable Lasagne

Ingredients

225g carrots
225g courgettes
1 onion
100g celery
1 chicken stock cube (or vegetable stock cube if catering for vegetarians. I prefer the flavour the chicken stock cube gives though)
25g butter
2 level tablespoons of flour
½ pint of milk
salt and pepper (I tend to omit this as I forget, and it's probably healthier without and there's salt in the stock - still tasty)
175g lasagne (although this depends on the dish size - get the quick cook stuff not the one you have to precook)
175g grated cheddar cheese

Method

  1. Preheat oven to 190°C (375°F Gas Mark 5)

  2. Place the chopped vegetables in a saucepan with the stock cube and ¼ pint boiling water. Yes, I know that doesn't look enough fluid, but trust me, it is. Bring to the boil and simmer for 10 minutes.

  3. Melt the butter in a pan, stir in the flour and cook gently for one minute, stirring. Remove the pan from the heat and gradually stir in the milk. Bring to the boil and continue to cook, stirring, until the sauce thickens, then add seasoning to taste. If too thick, add a little stock from the vegetables.

  4. Put layers of vegetables, lasagne, and only two thirds of the cheese (alternatively!) in a shallow, oblong or square, 3 pint dish, finishing with a layer of lasagne. Pour the sauce over the top and cover with the rest of the cheese.

  5. Bake in the oven for about 30 minutes.

  6. Serve with salad and/or crusty bread.

    Serves: 4 ish....

i use cheese sauce, instead of a layer of grated cheese.

Veggie Lasagne is lovely made with roasted veg - bung peppers/courgettes/aubergines/tomatoes in roasting tin, drizzle with olive oil, couple of rosemary twigs (or oregano or whatever you have) and roast until charred around the edges. Then use as the basis for the tomatoey layer with parmesan bechamel for the creamy layer.

Lentils work well - I make a tomato ragu with puy lentils added and layer it with thin sliced courgettes, tomatoes & lasagne sheets. Even DH who thinks a meal isn't right without meat liked it.

Thanks this sounds like what I had will try at the w/e.
I'm fed up of having veggie meals with quorenetc.

ikea do a beautiful veggie lasagne type thing..mmmmmmmmmmmmmmmmmmmmmmmmmmmm

also brewsters resteraunts do too

Roast a load of veg then layer with tomatoey soauce and bechamel sauce.

Just take out the pancetta to make this vegie. It's very simple and extremely delicious.



Roasted vegetable, feta and pancetta lasagne

Serves 6

3 courgettes sliced (about 700g)
3 red peppers sliced
2 red onions sliced
80g packet pancetta chopped
2 garlic cloves thinly sliced
5 tbsp olive oil
2 x 400g cans chopped tomatoes
lasagne
200g/8oz feta crumbled
large bunch fresh basil roughly torn
200ml tub crème fraiche
3 tbsp milk
50g/2 oz parmesan grated

Heat oven 220C/Gas 7. Mix courgettes, peppers, onions, pancetta, garlic and 3 tbsp oil in roasting tin. Season and roast 25 mins. Remove from oven and lower heat to 190C/Gas5. Spread about half can of tomatoes over oiled, shallow rectangular ovenproof dish (9 x 12 in).
Cover with layer of lasagne. Spread half roasted veg on top, then half remaining tomatoes. Sprinkle with half the feta and basil. Season and drizzle with oil. Cover with layer of lasagne and repeat the layers. Mix the crème fraiche with milk and spread it over lasagne. Sprinkle with parmesan and season. Bake for 30 ? 35 mins until bubbling and golden.

gateshead...actually..need new blinds for down stairs(wooden ones there are fab) and some new cup(got new catalogue delivered last night..lovely stuff)...plus really need some of their wonderful coat hangers..wooden ones..look posh, but nice n cheap...will have to start talking to dp first though..hmmmff

Yeah I was there last week!
Saw loadsof stuffbut had kids so it wouldn't fit in car so when they are at school I will have a day out!
