White chocolate and cranberry cookies.

1/2 cup unsalted butter
1/2 cup superfine sugar
1/2 cup light muscovado sugar
1 egg
1 tsp vanilla extract
1 1/3 cups flour
1/2 tsp baking powder
1/2 tsp salt
1 cup white chocolate cut into small chunks
1/2 cup dried sweetened cranberries

Preheat oven to 375F

Beat the butter toghether with the sugars. With a fork, beat the egg together with the vanilla extract and add this to the butter mixture.
In a bowl mix together the flour, baking powder and salt. Add this to the butter and egg mixture and blend. Mix in the white chocolate and cranberries.
To make the cookies, line 4 baking sheets with nonstick baking paper. Using your hands from the dough into walnut size balls and arrange on the baking sheets, spaced well apart.
Bake in the preheated oven for 10 min. Allow to cool for a few minutes and then transfer to a wire rack.

Sorry, measurements are American, got this book from the States!
