Hard boiled eggs, boil a dozen before setting off, cool in fridge, stick in coolbox and eat when peckish.
(My kids eat mainly biscuits obviously, eggs are poison)

Just realised you didn't say snack food, did you mean meals?

I'm not quite sure whether you meant snacks or meals.
I eat neither at the moment so my options would be crisps, crackers and nuts for snacks.
Most wraps are yeast free. Pasta, tuna/tinned fish is what my DS took when he did his DofE. Smoked sausage doesn't need refridgerating either.

Minty lamb kebabs in pitta breads. We found wild mint next to the tent one year which was a huge bonus. BBQ 'em with oiled peppers, tomatoes and whatever else you like.
Bacon and egg for breakfast.
Nuts, crisps and tortillas for snacks.
Cereal and sultanas (bit cheaty with the sugar but hey).
Pasta with chorizo, tomato, onion and olive sauce.

Rissotto: onions, quorn (or chicken if you must), fried in pan then add water, yeast free stock and sweetcorn (pumpkin seeds, pine kernals and sunflower seeds are optional). I season with curry powder and mixed herbs which I carry in a small pot.
