Multi Channel Monitors...and I mean lots

I am looking for a multi-channel monitor that will be able to use up to 8 channels at once, and actually function properly with all of them in use! I have a small family-friendly hotel and would like parents to be able to have dinner downstairs with the monitor to listen into their little ones upstairs.

Am I better to get one model with 8 channels or get mutliple different models/brands and hope they work on different frequencies?
