Anything baked which contains fruit is still a portion.

I have a Sophie Grigson recipe for a pear tart using a batter recipe which is just brilliant. It works perfectly with almost any fruit (but especially apples, pears, peaches and nectarines) which are at the past being nice enough to eat but not nasty enough to bin stage.

175g sr flour
175g sugar
175g butter
3 eggs
2 ripe bananas

chuck it all in a bowl and mix until it looks like cake mix. whack in a cake tin and bake at 160 for 30mins to 1 hour. mine took 40 mins.

On a slightly more serious note DP says if you chop up the fruit that's past the being nice to eat stage but not at the nasty enough to bin stage, stir it into yoghurt and add a spoonful of muscovado sugar it doesn't count as a portion.

He is wrong surely?

It doesn't taste too bananay I don't think. The banana just makes it nice and moist. I'm not a huge banana fan either but I love banana loaf.

So... I made some last night...
And it was vile! Sad

Dh ate a bit, then I put it all in the bin.
I used to like bananas but I think that's put me off for life.

Oh noooooo Lucky that's pants!

The last one I made all the banana and chic chips sunk to the bottom which wasn't great bleurgh.

I'd like to recommend this recipe but swap the poncey hazelnuts for shop bought ground almonds. But that's if you can ever get over the disappointment Sad
