Gluten / dairy free pancake recipe anyone?

Ds's school doing healthy breakfast week this week, and for some reason they are making bizarrely UN healthy brekkies (muffins, pancakes- what's wrong with mixing grains for muesli or boiling eggs? hmmm ) Anyway, I digress, DS1 is gluten free now and dairy free- what should I send them please? Only been doing it a week or so, but results already stunning!

I make them using doves farm gluten free flour

Hi Peachy - glad the GF/CF diet is going well - the difference in DS2 was astounding within a very short space of time.

Easy pancake recipe:

Dove's Farm gluten-free flour
Provamel Rice Milk (or soya milk etc)
1 egg (optional)
tiny bit of olive oil in pan to stop sticking

Would love to give precise measurements, but DH uses the 'bung it in a bowl method'.

Should be usual pancake consistency, and the first one out of the pan is rubbish.

Flip pancake when it starts to bubble.

We add a bit of jam or golden syrup sometimes as a treat, but usually DS2 just digs in quite happily without any extras.

So relatively normal proportions then? EXCELLENT!

Shall hang on to that for brekkie purposes too, as DS getting abit narky about restraints.
