Allergies and intolerances

Just made egg and dairy free pancakes!

And they were yummy! DS2 loved them and it was great for him to have pancakes with the rest of the family.

They were more like drop scones or scotch pancakes but he loved them smeared with jam...a good solution for special birthday breakfasts too.

Here is the recipe if anyone else wants to try:

1 cup plain flour
2 tbsp baking powder
1 tbsp sugar
Pinch of salt
1 cup soya milk
2 tbsp vegetable oil

Combine dry ingredients then slowly add wet ones while stirring. Heat pan til hot with dairy free spread in. Spoon out a couple of tablespoons of mixture. When bubbles appear turn over.

It was in an American vegan website hence the cups measurement. Wasn't sure how much that was so just used a small glass and it seemed to work!

I admit I've never made pancakes from scratch and we can now have baked egg so I can use egg again but I used to cheat with a packet mix (Cherrybrook Kitchen - I think only available in the US and Canada). Glad it worked out. I remember the first time I made cake without milk and egg I was so unsure whether it would taste nice (it was fine).

Another excellent source for egg and dairy free (also peanut and treenut) recipes is the Food Allergy Mommas blog. American so measurements are also in cups but I've made some great things from there. She has a great recipe book too.

Oh I am so silly! Did not even realise pancake day not until next week! We have half term next week so school did pancake stuff today and I got a bit over excited.

I use this same recipe too, you can add blueberries and have with maple syrup and soya cream (Marscapone for us!). People cannot believe they are vegan.
Also, I found out last year that if you make normal pancakes but miss out the egg, they (unbelievably!) STILL WORK. Even if made with soya milk instead of cow. Slightly less lacey than traditional ones but good enough for the kids. Its one of my favourite discoveries so far since having to create dairy and egg free stuff for my son (5 years down the line now!).

Its a long shot but does anyone have a recipe for dairy, egg, soya and wheat free pancakes?!
I will try experimenting if needs be but I'm a terrible cook at the best of times, let alone without a recipe and when unable to use any of the key ingredients!

Still - I would use the recipie in the OP, but substitute Doves GF flour for the flour & Kara coconut milk for the milk - it should turn out ok

Tbh you can't really go wrong with pancakes as long as you smother them with sugar & lemon!

I've just found out you can't leave the mix in the fridge to cook later- it bubbles up and goes everywhere!

I should have realised it would really but I'm no Nigella
