Tried this recipe yesterday and was so excited by the results I just had to share it. I caught DS licking the cupcake wrapper after he'd finished it. It made 10 good sized cupcakes - probably 12 little fairy cakes. Put all dry ingredients in a bowl, and wet ingredients in another one. Mix the wet, add to dry, mix until just combined. I modified mine as didn't have any limes.
Zest of 2 lemons
1 1/2 cup flour
1 cup Sugar
1 tsp bicarbonate of soda
5 tbsp Oil
1 tsp Vinegar
3 Tbsp lemon juice
1 tsp Vanilla
3/4 cup Water
For the Icing:
2 tbsp Lemon or Lime Juice
3/4 cup icing sugar
