would you eat defrosted ready Chinese sauce?

Best before date 30 December - must be last year! On packet, says to freeze on day of purchase and eat within a month - it's been frozen 8 months- is this OK? It doesn't appear to have anything terrible in it that would cause a tummy upset - wwyd???

Yes. Food does not go 'off' in the freezer - as long as it was frozen when still good, no power cuts, etc, etc.

The 'use within 1 month' is just that the taste and/or texture of food may not be as good after that time.

Probably, I don't think it will go off, but it might not be as nice iykwim.
What is Chinese sauce anyway ?

It's only the mouth feel, texture, that changes. Things get freezer burned (all the moisture gets sucked out). So it should be fine, if a little thick!
