What do you like to see at a buffet?

We will be having both sides of the family here on New Years day as and plan on doing a buffet of foods as every year.

However Im fed up doing all the usual foods.. sandwiches, sausge rolls, cocktail sausages and fancy adding something abit different.
What things have you had at buffets that went down well and were tasty?

Im no Delia, so nothing too tricky but I dont mind giving most things a go.

Thanks

lovely range of salads, good quality cheese and meats very fresh baguettes - Taking into account that over eating doesn't need to continue into the new year.

cook your own ham etc...

Pickles and chutneys with good quality cold meat.

Smoked Salmon

Frittata/Tortilla

Paella is great for a hot buffet imo.

Make your own wraps? This works well and doesn't require much doing.

I saw a good recipe on delicious dot com earlier - just ready made pastry rolled out, cut into squares, with a black olive, some pesto and some marinated peppers on each one while cooking. They look effective, and VERY easy.

I always find wraps go down well
tortilla , smothered with cream cheese and then layered with ham or smoked salmon and rolled then sliced.

I hate buffets with a load of pastry rubbish - quiches, sausage rolls, etc

I'd much rather have a simple thing like chilli and rice, or jacket potatoes with salads and cold meat - this to me is proper food rather than plates of stuff you end up eating too much of and it all tastes essentially the same....

Lovely salads with strong flavours - good spinach, watercress, nice dressings, not insipid basic salads, and certainly no cold pasta salads! Spicy Thai salads.

tasty cold meats, rare beef, smoked trout or maybe good salami?

Pork buns with apple sauce etc sounds a good option.
