Christmas pie - what do you think?

Thinking of making this and freezing it?

Do you think it sounds nice?

How would you defrost, in fridge overnight and then reheat in oven?

I think Peachy made and ate this recently and said it was yum. I think if i was making it to freeze , I'd ever so slightly undercook it the first time, freeze, defrost overnight in fridge, then reheat making sure it was piping hot throughout. By not quite cooking it the first time you could leave it in the oven longer the second time without it burning. That's my theory anyway!

I am making this on Monday so glad to know it's yummy. I am a bit worried about how to freeze it though and how the pastry will survive!

If it were me, I'd let the pie cool right down, then wrap it in greaseproof paper and then kitchen foil, then stick it in the freezer. That's what I do with everything else that's been baked anyway!

If it were me I'd freeze it with the pastry unbaked, then defrost, and cook as normal.

It looks yummy btw, will have to make this over Xmas.

OPh yes, very yum- had it for ds1's birthday (he has a chicken pie thing)

TBH i think it would be fine using either freezing method, i'llprobably do the unbaked when I make for boxing day though

Ooh I'm doing mine right now, will slightly under cook it as Knitter says, then freeze till boxing day then wack it back in the oven.
My pastry has already been frozen so didn't want to chance freezing it twice.
Need a veggie version of this as I don't eat meat!Any suggestions??

There are lots of comments under the recipe raspberry, not sure if any of them mention a veggie option.

Does freezing unbaked as opposed to baked make any difference?
