Ingredients1 tsp oil (sunflower or olive oil)1 onion, chopped 1 clove garlic, chopped 1 tin plum tomatoes, chopped 4 fresh tomatoes, chopped 1 vegetable stock cube 1 pint hot water Handful of basil Seasoning |

MethodHeat oil in pan.Add onions and garlic, fry for two mins. Add plum and fresh tomatoes and dissolve the stock cube in 1 pint of hot water in a jug, pour it in the pan with the tomatoes. Simmer for 15 mins. Tear basil into soup. Simmer for 30 - 45 mins on low heat. Blend with a hand blender and season to taste. Serve with crusty bread | |||||||||||||||||||
