Ingredients

1kg plums
300ml red wine
2 bay leaves
½ tsp ground cinnamon
2 cloves
1 star anise (never had one to use!)
Seeds from 4 cardamom pods or ¼ tsp ground cardamom
200g honey

Handy Hint

never had a star anise to use!

Method

Heat oven to 160C. Need shallow baking dish that will fit plums halved in one layer.
Halve plums, remove stones and lie in dish, cut side down.
Put all other ingredients in saucepan and bring to boil. Pour over plums, cover dish tightly with foil (or lid if it has one) & bake for one hour or till plums tender.
Serve with Barbados cream

I love this recipe to have a "smart" pudding at the ready in the freezer. I make it during the "glut" of plums & always take the spare when friends offer their surplus
